Curried Ham and Vegetable Couscous

2 1/2 Cups finely chopped Schad's Boneless or Semi-boneless Ham
2 tablespoons butter
1/2 cup of each: chopped green bell peppers, broccoli, carrots and red onions
1-1/2 teaspoons curry powder
1/8 teaspoon ground red pepper (optional)
1/4 cup raisins
1 can (14.5 ounces) Chicken Broth
1 cup couscous, uncooked
Toasted sliced almonds (optional)
Chopped fresh cilantro (optional)
Plain yogurt (optional)


1. Melt butter in large saucepan over medium heat. Add vegetables; cook 5 minutes, or until vegetables are crisp-tender, stirring frequently. Add curry powder and red pepper; cook and stir an additional 1 minute.

2. Stir in ham, raisins and broth; bring to a boil. Add couscous; mix well. Cover; remove from heat. Let stand 5 minutes, or until liquid is absorbed. Uncover; fluff with fork.

3. Garnish with the almonds, cilantro and/or yogurt, if desired.
