Old Fashioned Hickory Smoked Ham Shanks

Schad ham shanks or shin are the portion of meat around the tibia or the leg bone beneath the knee.

Schad’s shanks are cured in a salt and brown sugar brine overnight. The cured ham shank is then smoked by hanging over burning hickory wood chips in a smokehouse.

Schad’s shanks are fully cooked and will weigh between 1-1/2 and 2 pounds.
